BLUEBERRY CHEESECAKE WITH LEMON GLAZE

Summer is over for good. And yes, this sentence is as ugly as it sounds. No more fresh blueberries, raspberries, blackberries from the garden. Here comes the season of apples, which are mine favorite fruit (just imagine strudel, apple pie and other autumn desserts!). So I decided to  use the last bluberries and make the very last summer cake this season. It is filled with curd and it  is much lighter than the desserts for the upcoming season.


Dough: 
300 g of semi-fine flour
100 ml of oil
100 ml of milk
200 g of curd
3 eggs
100 g of granulated sugar
2 teaspoons of baking powder

Filling: 
250 g of Lučina (good alternative is Philadelphia)
200 g of sour cream (best is 15% fat)
2 tablespoons of powdered sugar
300 g of blueberries

Lemon Glaze: 
1 squeezed lemon
20 g of melted butter
180 g of powdered sugar
2 tablespoons of hot water

Preparation:
Dough: whisk together the egg whites with half of the dose of granulated sugar. In a second bowl whisk egg yolks with the rest of sugar. Add the oil, milk and curd. Gradually add flour mixed with baking powder. Mix the dough with egg white stiff and place on baking sheet.

Regarding the creamy filling, mix all the ingredients and a little mix it with hand beater. Slowly add blueberries and pour it on the dough.

The cake we bake at 170 degrees for about 45 minutes.

The lemon glaze: mix all ingredients in a bowl and stir it until the mixture is smooth, shiny and stiff. Attention, it cannot be too thick, otherwise you will not be able to work with it. Finally, pour it on the baked cake.
