OATMEAL COFFEE BREAD

So, I'm back after a long time :) I had a lot to do, work, school .. but I did not forget to bake so I have a few recipes to show you. Before I start about oatmeal coffee cake, I must share with you how I brought my blueberry cheesecake to work. It had great success :) I just refuse to buy overpriced strawberries and blueberries in winter, or frozen fruit, so I made cheesecake with caramel and nuts. I put half a cup of sugar and a cup of nuts (Brazil nuts, walnuts, almonds) and added 2 tablespoons of maple syrup. I cooked it for a while and it was something different at least. Plus nuts are much better than fruit in the winter!


And now, let´s talk about this oatmeal coffee bread. It is simple, healthy and tasty. That's enough for me. I was inspired by Kitchenette. 

Dough: 
cup of oatmeal 
cup of whole wheat flour 
cup of fine flour 
teaspoon of soda 
2 teaspoons of baking powder 
two spoons of vanilla sugar 
cup of cane sugar 
pinch of salt 
cup of olive oil 
cup of plain yogurt 

Crumble: 
cup of whole wheat flour 
half cup of oats
half cup of cane sugar 
½ cup of butter 
pinch of salt 

Preparation: 
Mix the dry ingredients for the dough, then add wet ingredients (oil, yogurt, etc.). Pour into the cake tin, sprinkle with crumb (all ingredients mixed together) and let it bake about 50 minutes at 180 degrees. 

Coffee bread is just as good with nutella, drizzled with maple syrup, honey, ... imagination has no limits :)
