CREAMY APPLE MUFFINS

When my little brother told me that he scored a hattrick, I had no clue what he was talking about. He explained to me that hattrick occurs when a player scores three goals during one match. And it is a tradition that this player brings something sweet. I decided to make muffins.

When the food blogger Kitchenette shared her apple muffins, I wanted to try those. Apple dough, cream filling and crumble. Devilish combination for me and certainly those young hockey players would not mind. I just modified the recipe a bit.

Ingredients for the dough:
cup of whole wheat flour
3/4 cup of fine flour
3/4 cup of cane sugar
spoon of honey
spoon of vanilla sugar
spoon of baking powder
teaspoon of cinnamon
pinch of salt
1/2 cup of butter
3/4 cup of apple puree
3 apples, peeled and grated
2 beaten eggs, just leave on the side 2 tablespoons (for the filling)

Cream filling:
500 g of curd
4 tablespoons of sugar
teaspoon of grated lemon zest
the rest of the eggs

Crumble:
3 tablespoons of butter
7 tablespoons of cane sugar
5 tablespoons of whole wheat flour
teaspoon of cinnamon

Preparation:
For the dough, mix all dry ingredients, except apples. In a second bowl, mix all wet ingredients. Then put it together and add apples cut into slices.

For the filling, mix all ingredients in a blender.

Prepare crumble, all materials carefully mix with hands.

Put about 3/4 of the dough to muffin form, a tablespoon of cream filling and sprinkle with crumble.

Bake for 40 minutes at 170 degrees.

The result? Amazing! Crispy, soft and healthy.
