YUMMY CARROT CAKE

Carrots are my favorite vegetables. It is proven that crunchy veggies create a good mood :) Why not to try a carrot in a sweet version and bake carrot cake? This is really yummy. Moreover, I like the wet dough! The only bad thing about baking is that I continuously taste the raw dough. I probably got it after my mom - she even made once a raw dough for herself. She simply mixed eggs, sugar, flour and ate it. Unfortunately it did not taste so amazing .. I guess that's because it was not so rare.


This recipe is inspired by the Joy of Baking

Cake corpus: 
100 g of crushed walnuts
3 cups of grated carrots
teaspoon of soda
pinch of salt
2 teaspoons of baking powder
260 g of fine flour
tablespoon of ground ginger
teaspoon of ground cinnamon
cup of granulated sugar
cup of canola oil

Filling: 
500 g of Philadelphia cheese
200 g of sour cream
50 g of sugar (you can add more, depending on your taste)

TIP: I recommend to use cane sugar

Preparation: 
Whip the eggs, add sugar, oil, salt, vanilla. Stir in flour, baking powder, baking soda and then gently stir in nuts with carrot and ginger. Bake at 150 degrees for about 60 minutes.

Mix the filling ingredients and spread on the baked and cooled corpus (divided into two parts). The dough should be wet, so do not worry that it is raw.
