APPLE SNOW PIE

And here it is. Season of apples. I always bake at least three different apple pies. When I was in America, I loved apple pie. Homemade. They have a special ingredient made just for baking apple pie. In the Czech Republic it is not possible to bake one of those real genuine American apple pie, which is a shame. Just because different kind of flour .. Anyway, still tastes good! This time I opted for a non-traditional version of the pie.

Dough:
400 g of fine flour
3 egg yolks
220 g of softened butter
150 g of sugar
spoon of vanilla sugar
spoon of baking powder

Filling:
350 ml of milk
1 custard powder
1 egg yolk
50 g of sugar

Apple filling:
4 egg whites
500 g of apples
100 g of sugar
spoon of vanilla sugar
2 teaspoons of ground cinnamon
2 teaspoons of rum
juice of one lemon
100 g of nuts (preferably walnuts)

Preparing the dough:
Process all ingredients in a bowl. I used a spoon for start and then I finished it with my hands. Put 2/3 of the dough into the cake tin - both the bottom and the sides. Bake in the oven at about 150 °C for about 10 minutes.

And the custard filling?
Put 250 ml of milk to the pot. Heat it. Meanwhile, mix the custard powder, sugar and egg yolk and pour in the boiling milk. Stir until the pudding thickens. Remove it from the stove, put a little butter on top and let it cool down.

The apple filling
Peel the apples and cut into slices. In a bowl, mix rum, sugar, lemon juice and cinnamon. In a second bowl, whisk together egg whites. Slowly stir into apple mixture and finally add the nuts.

Put the pudding cream and apples on cold cake. Cover it with the last sheet of dough (as a crumble) and decorate it with cinammon.

Bake the whole cake for 45 minutes at 170 degrees.
