SUPER SUPER FRUITY CHEESECAKE

So once again, there are thirty degrees. What I like the most is the harvest in the garden. Blueberries, raspberries, red currants, apricots and more. I totally adore to pick up the fruits right from the garden. This time, I decided not be that selfish and I baked cheesecake. Despite of crushing the biscuits, it is really fast and really delicious! 


As a filling, I decided to use only curd which is really popular among Czechs. However, you are free to use ricotta or mascarpone. Regarding fruits, it is entirely up to you. I prefer blueberries and these are perfect in combination with the curd! 



Ingredients: 
250 g biscuits
about 120 g butter
a handful of crushed almonds or oatmeal

Filling:
1 kg curd
4 eggs
vanilla sugar
a squeezed lemon
teaspoon of lemon zest
80 g sugar (you can add more or less, depending on your taste)
handful of red currants, may well be frozen

fruit for topping
gelatin powder + 2 tsp sugar + water

Preparation: 
First of all, crush the biscuits. This time, I used classic Bebe. Melt the butter together with almonds/oats and combine it with crushed the biscuits. Put the mixture into cake tin and press down properly to the bottom.

For the filling you put in the bowl curd, sugar and lemon. Gradually add egg after egg and finally gently stir in the fruits. Pour on the biscuits and bake at 160 degrees for 45 minutes.

Let the cheesecake to cool down. Then add fruit mixture and pour gelatin, prepared according to  the instructions.
