DEVILISH CUPCAKES

There is one thing why I love cupcakes. Besided eating them. I just enjoy to decorate them! As you probably know, I cannot resist anything that contains a cream. And cream is what makes cupcakes so tasty. And why devilish? Make them and you will see!


Cupcakes are birthday cakes of nowadays. Who wants that huge piece of cake when you can have these lovely tiny beauties? I am a huge fan of natural products so no unnecessary chemicals or food coloring. I opted just for cocoa and I decorated them with healthy almonds, milk chocolate and sprinkles which look so pretty! (I know, God knows what they contain :)

The recipe is inspired by the cookbook from PunkRockCakes. I already made cucpakes which you can find here!


Ingredients for 12 normal size cupcakes:
2 medium eggs
100 g caster sugar
75 g of sunflower oil
100-125 ml of milk
200 g semi-fine flour
1/2 spoon of baking powder
zest of 1/2 bio lemon
30 g of chocolate chips

The cream:
600 g of cream cheese (can be Philadelphia, Gervais or whatever you like)
100 g of sour cream
100 g white chocolate
granulated sugar if needed

Preparation:
Turn the oven to 170 ° C. Whisk together the egg, sugar and lemon zest and whisk for a while, until the mixture is combined and begins to form a foam. Add the oil and blend well shortly. In a bowl, mix the flour with the baking powder. Add milk and flour with baking powder to the mixture. You can add more or less milk, depending on the texture. At the end, stir in chocolate chips. Pour the dough into prepared cups and bake it. Fill only 2/3 of the cup.

After 15-20 minutes, cupcakes will start to form nice mound and they will get brown. Take the skewer and test if they are already finished. 

Let your cupcakes to cool down and prepare the cream. In a water bath, heat the chocolate. It cannot burn so do not rush it. Then add the cream cheese and sour cream. Using a hand mixer, mix it together. Then leave it for at least half an hour in the fridge otherwise you will not be able to work with it. It needs to hold the shape.

Using the decor tool, nicely decorate cupcakes with the cream. Then you can add whatever you want on the top. Or just let it be. Simple and pretty. It should be eaten within 2 days. I think that you will have no problem with that!
